Frequently asked questions
Q. How do i prepare masa for my tamales?
Masa should generally be smooth and creamy. If when you smear the masa to the corn husk, it adheares, then you've made your masa correctly. If your masa is dry to the point where it rolls out of the corn husk then it will not work with the machine.
Q. How do i prepare the meat?
You cook the meat as you normally do. You add your ingredients in and you put the meat in the fridge over night. The fat should then congeal over night. Afterwards, you take it out of the fridge and chop or pull the meat apart (the meat does not need to be grounded). The meat is then ready to be placed in the machine. The machine will not work well with messy liquidy meat.
Q. How do i operate the El Toro?
Operating the El Toro is very simple; in fact, its operated by a single switch! Heres how it works: The pistons inside the meat and masa cylinders go up and down like an elevator. When you start your cycle you start with the pistons on top. You push the switch and the pistons will gradually go down which takes about 2.5 / 3 minutes. when the pistons are moving down, thats when you should be filling up the cylinders with meat and masa. You want to start filling up the machine while the pistons are moving down as opposed to when they are at the bottom in order to avoid air pockets. When the cyclinders are full, you need to push the switch in order for the cyclinders to start to come up which will then take another 2.5/3 minutes . Thats when the El Toro is going to be making your tamales! When the tamale making cycle is finished, you push the button again when your ready to start filling up the cylinders.
Q. How many tamales does the machine make per cycle?
That depends on the diameter of the masa tube. A 1.25" Diameter tube gives you 40 dozen per hour, a 1.5" Diameter gives you 30, while the 1.75" Diaemeter tube gives you 20 dozen per cycle.
