The MRO-1G features a gear-driven rack lift that replaces the linear actuator, a part that often fails in commercial ovens. This mechanical system cuts down on service calls and downtime, extending the oven’s lifespan for bakeries running multiple shifts. The B-style rack holder fits one rack per cycle and works with 10, 15, or 20-space MACADAMS racks, so you can adjust capacity to match your products. Without hydraulic or electronic controls, the gear-driven lift keeps maintenance simple and changeovers fast.
Water Drop Steam System with Automatic Fan Pause
The water drop steam system delivers precise steam injection for every bake, essential for proper crust on artisan breads, baguettes, and specialty items. When steam is injected, the fan pauses automatically so steam can fill the chamber evenly. This ensures consistent crust color, texture, and oven spring across all 18 tray positions. The system runs on a 1/2 inch cold water line at 20 PSI and needs filtration to prevent mineral buildup and keep the steam nozzle working reliably.
Energy-Saving Counterflow Heat Exchanger
The counterflow heat exchanger recovers exhaust heat and returns it to the oven chamber, cutting fuel use per bake. This system lowers operating costs and keeps chamber temperatures steady during continuous production. The single penetration canopy works with the exchanger to reduce conditioned air loss and eliminates the need for a second roof opening. The canopy ships with the oven for easy installation.
Blue Angel Burner with Electric Damper Control
The Blue Angel burner provides stable flame control and efficient fuel delivery across the full 170,000 BTU range. Its design makes service straightforward, with easy access to components for faster maintenance. The electric damper automatically regulates combustion air for precise temperature control and better fuel efficiency, responding to the controller to hold set temperatures. The oven runs on natural gas, with propane as an option. The MRO-1G holds 18 full-size sheet pans per bake, with capacity for up to 100 bread loaves, 36 dozen rolls, 90 baguettes, or 36 dozen pies depending on your tray setup. The oven’s high-grade stainless steel frame and chamber resist corrosion and stand up to daily use in humid bakery environments. It runs on 208/240V, 60 Hz, 3-phase power and uses 4 amps at 208V for electrical components. The SMART Controller gives you digital control over temperature, timing, and steam for multi-product baking. When door clearance allows, the oven ships fully assembled with prewired motors, so installation is limited to mounting the canopy and connecting utilities.
