This unit sheets dough balls into rounds up to 16 inches in diameter and handles portion sizes from 1 to 25 ounces, making it suitable for a wide range of pizza and flatbread applications. Manual thickness adjustment gives operators precise control over final dough thickness, supporting menu consistency across different styles and sizes.
Two-Stage Cold Working System
The LAM040 uses a two-stage sheeting process that gradually reduces dough thickness instead of compressing it in a single pass. This cold working method helps prevent dough overheating, protecting gluten structure and ensuring better texture, elasticity, and bake performance. The result is a more consistent crust with reduced operator handling.
High-Output Countertop Design
Capable of processing approximately 200 to 250 dough pieces per hour, this sheeter supports high-volume prep without taking up excessive space. Front infeed and front discharge streamline workflow, allowing operators to work efficiently in tight prep areas or behind the line.
