The Axis AX-VB3 Gas Gyro Machine
The Axis AX-VB3 is a gas vertical broiler with three infrared burners delivering 34,140 BTU, capable of holding up to 90 lbs. of meat on the spit. Vertical broilers are the standard equipment for gyro, shawarma, doner kebab, and al pastor operations. The vertical design lets fat and juices drain away from the heat source as the meat rotates, resulting in a self-basting effect that keeps the outer layer crispy while the interior stays moist.
Individual Infrared Burner Controls
Each of the three infrared burners has its own individual control, so you can adjust heat zones independently based on where the meat is thickest. A freshly loaded spit with a full 90 lbs. of stacked meat might need all three burners at high output, but as you shave the meat down during service, you can reduce the top or bottom burner to match the remaining product shape. This prevents overcooking thin areas while the thicker center continues to cook through.
The stainless steel AISI 304 construction resists corrosion from meat juices and grease, and the enclosed motor protects the drive mechanism from the same contaminants. The removable drip tray catches rendered fat for easy disposal, and dual rails support the spit assembly. The unit requires 110v/60/1-ph power for the motor. Overall dimensions are 18"W x 22"D x 39"H.
