The Omcan STAGIONELLO 150 is a 330 lb StagionelloEvo curing cabinet, the only Stagionello model equipped with dual internal fans and an included air exchange kit. It produces finished salami in an average of 20 days by automatically managing temperature, humidity, air speed, and smoking phases through the ClimaTouch controller. At 36" wide, it serves charcuterie producers, butcher shops, and restaurants that need higher capacity than the 220.5 lb unit with more uniform airflow across the full load.
ClimaTouch 6-Inch Touch Screen with 30 Classic Italian Presets
The StagionelloEvo version of ClimaTouch comes preloaded with 30 classic Italian recipes that automate all sequential processing stages: salting, stewing, smoking and aromatization, drying, and seasoning. It calculates pH levels during fermentation through the pre-calibrated pH probe connected to the PLC, and logs all data automatically for HACCP compliance. The 352 Kb internal memory holds approximately 100 recipes that you can modify or replace with your own formulations. For slow-fermentation products like capicollo, the delicate salting phase runs under full automatic control.
Fumotic Humidity and Flavor System with Dual Fans and Air Exchange
Fumotic is Stagionello's patented dual-purpose system for regulating both humidity and flavor inside the chamber. It works with the built-in tank system to deliver humidity on demand and introduce aroma profiles as each stage of the cure requires. This model adds dual internal fans for more uniform air circulation across the full 330.7 lb load, plus an included air exchange kit that manages fresh air introduction during the drying and seasoning phases. Four standard probes monitor conditions continuously: a humidity probe, an ambient temperature probe, an evaporator/defrost probe, and a condenser probe. The professional-grade non-monoblock refrigeration system operates in ambient temperatures up to 89.6°F.
AISI 304 Stainless Steel Construction with Glass Display Door
The entire cabinet is manufactured from AISI 304 stainless steel with a scotch-brite finish, inside and out. The stainless steel door (not aluminum) features a large dual-insulated glass panel with 59% UV protection, so you can monitor product transformation or use the cabinet as a retail showcase. CFC-free polyurethane foam insulation is injected into the unibody frame for a higher R-value than panel-assembled designs. The interior holds 4 guide sets with 20 AISI 304 stainless steel hanging rods. The unit measures 35.6" x 30.7" x 83" and weighs 440 lbs. Runs on 220V/3.42kW/14A with a NEMA 6-15P plug. Made in Italy.
