The Omcan STGTWITF0 Stagionello Twin is a dual-chamber curing cabinet with two independent 220 lb compartments side by side, giving you 440 lbs of total capacity with the ability to run different curing programs in each chamber simultaneously. It produces finished salami in an average of 20 days per chamber by automatically managing temperature, humidity, air speed, and smoking phases through independent ClimaTouch controllers. This is the unit for operations that cure different products at the same time — salami at one humidity level in one chamber and bresaola at a different temperature profile in the other.
Dual Independent ClimaTouch 6-Inch Touch Screens with 100 Preset Recipes Each
Each chamber has its own ClimaTouch 6-inch touch screen controller that automates all sequential processing stages independently: salting, stewing, smoking and aromatization, drying, and seasoning. Each calculates pH levels during fermentation through its own pre-calibrated pH probe connected to the PLC, and logs all data automatically for HACCP compliance. Each controller's 352 Kb internal memory holds approximately 100 recipes that you can modify or replace with your own formulations. For slow-fermentation products like capicollo, the delicate salting phase runs under full automatic control in each chamber independently.
Independent Fumotic Humidity and Flavor Systems with Four-Probe Monitoring Per Chamber
Each chamber has its own Fumotic dual-purpose system for regulating humidity and flavor independently. Each works with its own tank system to deliver humidity on demand and introduce aroma profiles as each stage of the cure requires. This means smoking and aromatization profiles don't bleed between chambers — you can infuse one side with applewood notes while the other runs a straight dry cure. Four standard probes per chamber monitor conditions continuously: a humidity probe, an ambient temperature probe, an evaporator/defrost probe, and a condenser probe. The professional-grade non-monoblock refrigeration system operates in ambient temperatures up to 89.6°F.
AISI 304 Stainless Steel Construction with Dual Glass Display Doors
The entire cabinet is manufactured from AISI 304 stainless steel with a scotch-brite finish, inside and out. Both stainless steel doors (not aluminum) feature large dual-insulated glass panels with 59% UV protection, so you can monitor product transformation or use the cabinet as a retail showcase. CFC-free polyurethane foam insulation is injected into the unibody frame for a higher R-value than panel-assembled designs. The interior holds 4+4 guide sets with 20+20 AISI 304 stainless steel hanging rods across both chambers. The unit measures 57.48" x 30.7" x 83" and weighs 550 lbs. Runs on 220V/3.21kW/14.6A with a NEMA 6-20P plug. Made in Italy.
