The Omcan STG100300 Stagionello is a dual-section curing cabinet combining a 220.5 lb curing chamber with a 661.4 lb aging and storage chamber for a total capacity of 880 lbs. It produces finished salami in an average of 20 days by automatically managing temperature, humidity, air speed, and smoking phases through the ClimaTouch controller. Products start in the active curing section for salting, smoking, and initial drying, then move to the larger aging section for extended seasoning, giving you a continuous production pipeline in one unit.

ClimaTouch 6-Inch Touch Screen with 30 Presets and 100 Recipe Capacity

The ClimaTouch controller is a 6-inch touch screen display that automates all sequential processing stages: salting, stewing, smoking and aromatization, drying, and seasoning. It calculates pH levels during fermentation through the pre-calibrated pH probe connected to the PLC, and logs all data automatically for HACCP compliance. The 352 Kb internal memory comes preloaded with 30 classic recipes and holds approximately 100 total that you can modify or replace with your own formulations. For slow-fermentation products like capicollo, the delicate salting phase runs under full automatic control.

Fumotic Dual-Tank Humidity and Flavor System with Industrial Refrigeration

Fumotic is Stagionello's patented dual-purpose system for regulating both humidity and flavor inside the chamber. The dual-tank configuration delivers humidity on demand and introduces aroma profiles as each stage of the cure requires, with level alerts so you know when tanks need refilling. The industrial-grade refrigeration system maintains stable microclimates across the full 881.8 lb load. Additional systems include automatic internal lighting, a dehumidifier, an air exchange system for controlled fresh air introduction, a heated frame to prevent condensation, and hot gas defrost. Four standard probes monitor conditions continuously: a humidity probe, an ambient temperature probe, an evaporator/defrost probe, and a condenser probe.

All food-contact surfaces are manufactured from AISI 304 stainless steel. The doors feature dual-insulated glass panels with UV protection, so you can monitor product transformation or use the cabinet as a retail showcase. CFC-free polyurethane foam insulation is injected into the unibody frame for a higher R-value than panel-assembled designs. The unit measures 100" x 37.4" x 101" — the narrower depth compared to the STG200600 makes it more practical for spaces where front-to-back clearance is limited. Runs on 220V/60Hz three-phase plus neutral at 7.12kW/10.32A with a NEMA L15-20P locking plug. Made in Italy.
