ClimaTouch 6-Inch Touch Screen with 30 Presets and 100 Recipe Capacity
The ClimaTouch controller is a 6-inch touch screen display that automates all sequential processing stages: salting, stewing, smoking and aromatization, drying, and seasoning. It calculates pH levels during fermentation through the pre-calibrated pH probe connected to the PLC, and logs all data automatically for HACCP compliance. The 352 Kb internal memory comes preloaded with 30 classic recipes and holds approximately 100 total that you can modify or replace with your own formulations. For slow-fermentation products like capicollo, the delicate salting phase runs under full automatic control.

Fumotic is Stagionello's patented dual-purpose system for regulating both humidity and flavor inside the chamber. The dual-tank configuration delivers humidity on demand and introduces aroma profiles as each stage of the cure requires, with level alerts so you know when tanks need refilling. The industrial-grade refrigeration system maintains stable microclimates across the full 1763.7 lb load. Additional systems include automatic internal lighting, a dehumidifier, an air exchange system for controlled fresh air introduction, a heated frame to prevent condensation, and hot gas defrost. Four standard probes monitor conditions continuously: a humidity probe, an ambient temperature probe, an evaporator/defrost probe, and a condenser probe.
