The Omcan Affinacheese® STG200TFO Cheese Drying Cabinet is purpose-built for drying and seasoning all types of cheeses with a 440 lb capacity and 14 polypropylene shelves. This large-format dual-door unit provides maximum production throughput for cheese aging operations requiring high volume and precise environmental control.

Precision Climate Control for Cheese Drying and Seasoning

Working temperature range of 23°F to 122°F and storage temperature range of 14°F to 158°F provide precise environmental management for every stage of the cheese drying process. The 220V/60Hz/1Ph electrical system maintains stable conditions across the full 440 lb capacity and 14 polypropylene shelves arranged behind dual glass doors for easy access and monitoring.

Fumotic® Integrated Aromatization with Air Exchange System

The standard Fumotic® system enables controlled aromatization during the drying process, while the integrated air exchange kit maintains optimal atmospheric conditions within the cabinet. A water filter and dual water/aroma tanks support precise humidity management, ensuring consistent cheese texture development throughout extended drying cycles.

AISI 304 Stainless Steel Construction with Polypropylene Shelving

All internal and external parts that come in contact with food are built from AISI 304 stainless steel for maximum corrosion resistance and sanitation. Food-grade polypropylene shelves provide a non-reactive, easy-to-clean surface ideal for direct cheese contact. The cabinet includes a drain tray, flexible drain hose, smooth guide sets, and 4 adjustable legs for level installation.
