Independent Twin-Chamber Drying with Dual Climate Zones
Two fully independent drying chambers each provide working temperature control from 23°F to 122°F and storage temperature range of 14°F to 158°F. Each chamber includes 7 polypropylene shelves and its own glass door, enabling operators to manage two separate drying programs simultaneously for maximum production flexibility across different cheese types and aging stages.
Fumotic® Integrated Aromatization with Air Exchange System
The standard Fumotic® system enables controlled aromatization during the drying process, while the integrated air exchange kit maintains optimal atmospheric conditions within each chamber independently. A water filter and dual water/aroma tanks support precise humidity management, ensuring consistent cheese texture development throughout extended drying cycles.
AISI 304 Stainless Steel Construction with Polypropylene Shelving
All internal and external parts that come in contact with food are built from AISI 304 stainless steel for maximum corrosion resistance and sanitation. Food-grade polypropylene shelves provide a non-reactive, easy-to-clean surface ideal for direct cheese contact. The cabinet includes a drain tray, flexible drain hose, smooth guide sets, and 4 adjustable legs for level installation.
