The Omcan Stagionello® Dry Age 3.0 (Model MM-IT-1400-TWV) is a 1400-liter dry aging cabinet in the 2-Glass View configuration, which adds two side glass panels to the standard two glass doors for enhanced product visibility from three angles. When your aged ribeyes and charcuterie are on display in a restaurant entrance or butcher shop floor, customers see the product developing from the front and sides without you needing to open the door and break the controlled environment. The cabinet holds up to 992.1 lb across 4+4 stainless steel shelves, each rated to 77 lb, giving you room to run multiple aging programs simultaneously on different shelf levels.
Umiright® Humidity Management with 30-99% RH Range
The Umiright® system gives you real humidity control from 30% to 99% RH, not just a target number the cabinet tries to approximate. It regulates drop-weight at any point during the aging process, which means your primals lose moisture at the rate you choose rather than whatever the ambient conditions dictate. For a dry-aged ribeye that needs to develop a firm bark without drying out the interior, you set the humidity higher in the first week and taper it down as the aging progresses. The system connects to either a direct water line or a refillable tank, so you can install it wherever your operation needs it without plumbing changes.
Dynaflow® Air Management and 27°F to 95°F Operating Range
Dynaflow® manages thermodynamics and air speed inside the cabinet to guarantee even aeration across every shelf. Uneven airflow is what causes hot spots where mold takes hold or cold spots where the aging stalls. The working temperature range of 27°F to 95°F (26.6°F to 95°F) covers everything from near-frozen fresh preservation to warm fermentation programs. Ventilation is automatic and adjustable, so you can dial in the air movement for delicate fish aging or push it higher for large beef subprimals that need aggressive surface drying. The U.T.A. air treatment unit is built entirely from AISI 304 stainless steel with no polystyrene components, which eliminates a common source of off-flavors and makes the unit fully washable.

The 4.3" color touch screen runs Dry-Age Control 3.0 software with 10 pre-loaded climatic recipes: five dedicated to dry-aging processes and five for fresh meat preservation. Four scientifically validated presets cover beef, pork, sheep/goat, and wild game, plus one fully customizable recipe where you set time, temperature, humidity, and ventilation parameters yourself. The pH-metric system continuously reads and monitors alkaline and acid pH levels, with min-max alarms and a dual HACCP register that logs temperature, humidity, and pH by event, date, and time. If the pH drifts outside your set range during a 45-day ribeye age, the alarm fires before the product is compromised.
