Each zone runs its own 3.6 kW serpentine burner element for a combined 7.2 kW of cooking power, and each has its own thermostat so you can run one side hotter for searing steaks while keeping the other at a lower temperature for vegetables or chicken. Heavy-Duty 1-Inch Cast Iron Plates with Dual Zone Control

The cast iron cooking plates are 1.2 inches thick on the charbroil side and 1 inch on the griddle side, substantially thicker than what you find on lighter-duty units. Thick cast iron stores more heat and releases it more evenly, so when you drop a cold burger patty on the surface, the temperature recovers faster and you get consistent sear marks across the entire piece of meat rather than pale spots where the iron lost too much heat.
