The Omcan 46088 Flywheel Slicer
The Omcan Omas Volano S37 is a 14.5" manual flywheel meat slicer built in the traditional Italian volano style, where the operator powers every stroke by hand through a weighted flywheel rather than an electric motor. That hand-driven action gives you complete control over slicing speed and pressure, which matters when you are cutting prosciutto, bresaola, or copa where each slice needs to come off the blade at a consistent thickness without tearing or compressing the grain. The 14.5" blade handles whole muscle cuts up to 11.4" x 10.2" in rectangular cross-section or 10.2" round, covering the full range of cured meats and hard cheeses that a specialty deli, charcuterie bar, or Italian restaurant would serve.
Precision Thickness Control from Paper-Thin to 0.15"
The slice-thickness knob adjusts from 0 to 0.15" (0 to 0.16 in.), and the precision of a manual flywheel means the blade doesn't speed up or slow down between strokes the way a motor-driven slicer can when hitting resistance. You set your thickness once and every slice comes off the blade matching the last. For translucent prosciutto slices that drape over a plate, you dial down near zero. For thicker salami rounds or Parmigiano-Reggiano wedges, you open it up to 3 or 0.16 in.. The pusher holds the product firmly against the blade so it doesn't shift mid-stroke, which is what causes uneven thickness and ragged edges on cured meats.
176 lb Cast Iron and Stainless Steel Construction
At 176.3 lb on a cast pedestal stand, this slicer stays absolutely still during operation. The mass of the flywheel stores rotational energy so each forward stroke carries smoothly through the cut without you muscling through dense product. The red powder-coated flywheel cover and chrome-finished components give the machine the classic Italian deli aesthetic that draws customers' attention in an open kitchen or front-of-house carving station. The machine disassembles for cleaning without tools, and the all-metal construction means no plastic parts to crack or harbor bacteria. Made in Italy by Omas, a manufacturer specializing in commercial slicing equipment for over 60 years.
