The Comstock-Castle 3248MG Gas Griddle
The Comstock-Castle 3248MG is a 48 inch wide countertop gas griddle from the 32 Series, Comstock-Castle's heavy-duty line with a 24 inch cook depth and a 1 inch polished steel plate, built in Quincy, Illinois for high-volume lines that run the flat top all day. It fires four cast iron H pattern burners at 25,000 BTU each, 100,000 BTU total, across 1152 square inches of cooking surface, and ships set up for natural gas or propane as you specify.
The 24 inch depth is the point of this series. A standard 20 inch plate holds one row of large items; 24 inches gives you a second row or a holding zone at the back, and the 1 inch plate carries enough heat that a tray of frozen patties does not pull the surface temperature down.
1 Inch Polished Steel Plate, 48 x 24 Inches
The plate is 1 inch highly polished steel, 48 inches wide by 24 inches deep. A 4 inch splash guard runs the back and sides, with higher sides available, and a front cold zone grease trough with a 3.5 x 1 inch drain slot feeds a seamless, deep, removable grease drawer. Chrome plating and grooved surfaces are factory options.
Manual Brass Gas Valves With Standing Pilots
Each burner is set by hand through a brass gas valve with an automatic standing pilot. Nothing to calibrate, nothing to fail but a valve. The same griddle with thermostats is the 3248TG. Pressure regulators are factory set for the gas you order, 4 inch WC natural gas or 10 inch WC propane, on a 3/4 inch NPT manifold.
Double Wall Insulated Stainless Steel Body on 5 Inch Legs
Corrosion resistant stainless steel welded over angle iron and aluminized inner framing, with double wall construction and heavy insulation so the sides run cooler. It stands on heavy duty stainless pipe legs with adjustable feet, and a 4 inch wide stainless bull nose landing across the front protects the controls and gives you a place to set plates and utensils. Clearance to non-combustible surfaces is zero at the sides and rear; to combustible surfaces it is 4 inches on the sides and 5 inches at the rear. The 32 Series matches up with Comstock-Castle 32 Series charbroilers and hotplates.
About Comstock-Castle
Founded in 1838 in Quincy, Illinois, Comstock-Castle is America's oldest stove manufacturer still in operation. The company grew from a frontier hardware shop into a grey-iron foundry that helped make Quincy the nation's stove-production hub by the early 1900s. Seven generations later, Comstock-Castle still designs and union-builds commercial cooking equipment in the same Quincy facility, with ranges, griddles, charbroilers, fryers, and modular cook lines configurable from 24 to 72 inches to match your menu. Built to outlast the kitchens that put them on the line.
