The Revent PR192-168 PROOFER/RETARDER Roll-In Retarder/Proofer
Six single racks park three across and two deep in the Revent PR192-168, which is what a bakery needs when a full night of shaped product has to sit in one place instead of two cabinets. Three double racks fit the same chamber. Racks measure 28.5 by 18 in. and roll through a 57.5 in. wide two door opening, while PID regulation keeps the front row and the back row on the same temperature and humidity, which is the whole argument for one six rack chamber over a pair of small boxes. Any set point from 27 to 113 °F is available, so the cabinet retards shaped dough overnight, thaws frozen product on programmed curves, and finishes the proof before the first bake, although it is not built to hold product frozen for days. Utilities are a 208 to 220 V three phase circuit at 24 A, cold water, a 1 1/2 in. NPT drain, and a leveled floor.
Retarding, Slow Proofing, and Thawing in One Chamber
Overnight storage, slow proofing, and thawing on pre-programmed curves are the three things this chamber does, and at six racks they usually run as one continuous schedule rather than three separate tasks. Dough shaped at the end of the day goes in cold, sits through the night, and climbs a curve that lands it at full proof when the oven is up to temperature. Bakeries that split the work between a cold room and a proof box spend the early morning moving racks, while this one keeps the dough still and moves the air instead.
PID-Regulated Temperature and Humidity
Setting and reading both temperature and humidity happens on a programmable touch screen, and optimized PID regulation holds each of them steady instead of overshooting, which keeps energy use down on a cabinet this size. The controller pairs that with a computer controlled fan offering 200 speed steps, low enough not to disturb delicate pieces during a long retard and high enough to even out six racks when the curve calls for proof. Humidity is available even at storage temperature, so the top rack does not skin while the bottom rack is still coming down.
Electromagnetic Steam Generator
An electromagnetic steam generator supplies the moisture, and because the steam container holds no mechanical or electrical parts, there is nothing inside it to seize or corrode. The nozzle discharges into the chamber after the fan and the temperature elements, so steam is already mixed with tempered air by the time it reaches a rack. No cold water enters the proofing space directly, unlike direct cold water humidification, and the generator drains itself between cycles.
Roll-In Capacity for Six Singles or Three Doubles
The printed layout puts six single racks of 28.5 by 18 in. three across and two deep behind a 57.5 by 76.7 in. two door opening, and three double racks occupy the same space. Exterior width is 66.1 in. and depth is 75.6 in., with 2 in. of projection at the front, 7.3 in. at the rear, and 3.5 in. for door hardware. Overall height is 100 in. above a 76.7 in. cabinet, the base clears the floor by 6 in., and the drain leaves at a 63 in. height, which is the number your plumber needs before the slab work starts.
Stainless Steel Cabinet with Integrated Refrigeration
Stainless steel forms both the interior and the exterior, a double pane glass window keeps the load in view, and LED lighting makes the back row as readable as the front. Cooling is handled by an integrated condensing unit running R449 refrigerant for compliance with current air quality rules, which keeps the mechanical package on board. Give the cabinet a level floor, 2 in. of clearance from any wall, and open front and top access for service and ventilation. An insulated and heated floor is listed as an option.
