The IKON ITG-36 is a 36-inch countertop gas thermostatic griddle with three 30,000 BTU U-shape burners producing 90,000 BTU total across a 36 by 20.5 inch cooking surface. Three independent 12-inch cooking zones with thermostatic controls give you enough room to run a breakfast station with eggs on one end, pancakes in the center, and hash browns or sausage on the other side, each at a different set temperature that the thermostat maintains automatically. At 36 inches wide, it handles the volume of a mid-sized restaurant, diner, or hotel breakfast line where consistent griddle temperatures matter for product quality across a full shift. Each 12-inch cooking zone is powered by a U-shape burner producing 30,000 BTU. The U-shape design wraps the flame path under the griddle plate so heat spreads across the full width of each zone instead of concentrating in a narrow strip down the center. The 1-inch thick polished steel griddle plate sitting above the burners stores significantly more thermal energy than a standard 3/4-inch plate, which means the surface recovers temperature faster after you load it with cold product. During a breakfast rush or a high-volume burger service, that extra quarter-inch of steel is the difference between maintaining a consistent sear and watching the plate temperature drop every time you lay down a new batch. Thermostatic controls on each zone let you set an exact temperature and walk away. The thermostat maintains that temperature automatically by modulating the gas flow, so your eggs stay at 325 degrees and your burgers stay at 375 without a cook standing there adjusting knobs by feel. All Stainless Steel Cabinet with Cool-Touch Front Edge and Welded Splash Guards
The entire cabinet is stainless steel, and the sides are double-wall insulated to keep heat inside the cooking chamber and reduce the surface temperature on the exterior panels. The front edge of the griddle uses a cool-to-the-touch stainless steel design, so line cooks working directly against the griddle during a rush are less likely to get burned from incidental contact. Back and side splash guards are fully welded to the griddle plate, which eliminates the seam where grease and food particles would otherwise collect and makes the whole top surface faster to scrape down and wipe clean between orders. A rear flue vents combustion gases out the back of the unit. Below the cooking surface, a 4-inch wide grease trough (standard spatula width, so you can push rendered fat directly into it during scraping) channels cooking liquids into a 3-1/4-inch grease drawer equipped with a weep hole and baffle. The baffle slows the flow of hot grease into the drawer so it does not splash, and the weep hole lets liquids drain fully so the trough stays clear. The grease drawer slides out from the front for quick emptying between shifts. The entire griddle is fully serviceable from the front, so you can access burners, gas valves, thermostats, and pilot assemblies without pulling the unit off the line. Adjustable stainless steel legs with non-skid feet let you level the griddle on any countertop. Each unit ships with a conversion kit for switching between natural gas and liquid propane.
