The Omcan MATC150TF is a 330 lb capacity Maturmeat meat maturation cabinet sized for restaurants, specialty butcher shops, and culinary programs adding dry-aged beef and house-made charcuterie to their menus. Five guide sets with five stainless steel shelves give you the flexibility to hang primal cuts from rods or lay salami and bresaola flat across shelves. The cabinet measures 30.7" x 35.4" x 83" and comes standard with a dual internal fan and air exchange kit for even airflow distribution across the full shelf depth.
Non-Monoblock Refrigeration System
A professional-grade non-monoblock refrigeration system powers the MATC150TF, with the compressor, condenser, and evaporator sourced as separate commercial components. If one part needs service, a technician can work on it independently without pulling the entire sealed unit. Working temperature spans 23 to 122°F, and storage range reaches 14 to 158°F, wide enough for cold-aging steaks or running a warmer cure cycle for whole muscle salumi. The dual internal fans and air exchange kit included with this model improve circulation compared to single-fan cabinets, reducing the chance of uneven drying or hot spots on shelves near the back wall. The system functions in ambient conditions up to 89.6°F and draws 3.5 kW at 14.4A on a 220V single-phase circuit.
ClimaTouch® Touch Screen with Fumotic®
The 6-inch ClimaTouch® touch screen gives you single-panel control over temperature, humidity, air speed, and smoke or flavor parameters. Set your target values and the controller holds them automatically through the full recipe cycle, adjusting in real time as chamber conditions shift. Four standard probes monitor humidity, ambient temperature, evaporator/defrost temperature, and condenser temperature, all displayed on screen. An optional pre-calibrated pH probe connects to the PLC for tracking fermentation in salami and other cultured products. The Fumotic® system regulates relative humidity inside the chamber and delivers cold smoke or flavoring without combustion, so the organoleptic character of the meat stays intact while gaining depth. Internal memory holds approximately 100 recipes on 352 KB of RAM, and HACCP data logging runs continuously for compliance documentation.

The full body and doors are AISI 304 stainless steel, non-porous and built for the repeated chemical washdowns a food-production environment requires. CFC-free polyurethane foam is injected in a unibody construction with no thermal seams or air gaps. Dual insulated glass door panels provide 59% UV protection, letting you evaluate product surface development and color without opening the door and dropping the humidity. A pressure valve handles altitude variation, and resistance heating lines on the door frame prevent condensation buildup and keep the gasket supple in cold-temperature cycles. Standard guide sets and hanging rods are AISI 304 stainless steel, rated for the full weight capacity of the unit. Adjustable AISI 304 legs come standard, with an optional 5.2" wheel kit.
