The Omcan MATC100TF is a 220 lb capacity Maturmeat meat maturation cabinet designed for restaurants, hotel kitchens, and smaller butcher operations that want to bring dry-aging and charcuterie production in-house without dedicating a full room to it. Five guide sets with five stainless steel shelves fit inside a compact 30.7" x 28.7" x 83" footprint, which slots into a kitchen line or prep area where a double-door unit would not fit. Maturmeat reproduces the microclimates for traditional meat maturation in as little as eleven days, giving you the ability to dry-age ribeye primals, cure bresaola, or develop salami all within one controlled environment.
Non-Monoblock Refrigeration System
The MATC100TF is powered by a professional-grade non-monoblock refrigeration system with individually sourced compressor, condenser, and evaporator components. Each piece can be serviced independently, so a condenser issue does not require pulling the entire refrigeration assembly. Working temperature covers 23 to 122°F, and storage range reaches 14 to 158°F, spanning cold-hold aging through warmer salumi curing cycles. The system handles ambient conditions up to 89.6°F, and electrical draw is a moderate 2.376 kW at 10.8A on a 220V single-phase circuit, keeping utility costs manageable for a single-door unit.
ClimaTouch® Touch Screen with Fumotic®
The 6-inch ClimaTouch® touch screen controls temperature, humidity, air speed, and smoke or flavor parameters from a single interface. Set your targets and the controller maintains them automatically through the recipe cycle, adjusting as conditions shift when you open the door to check product or load new cuts. Four standard probes — humidity, ambient temperature, evaporator/defrost, and condenser — provide continuous monitoring. An optional pre-calibrated pH probe plugs into the PLC for real-time acidity tracking during salami fermentation. The Fumotic® system performs double duty: it regulates relative humidity and delivers cold smoke or aroma flavoring without combustion, so the meat's organoleptic properties are preserved. Internal memory stores approximately 100 recipes on 352 KB of RAM, and built-in HACCP logging keeps a running compliance record.
AISI 304 Stainless Steel Cabinet
Body and doors are AISI 304 stainless steel throughout, non-porous and built to handle the chemical washdowns of a commercial food environment. CFC-free polyurethane foam is injected in a unibody construction with no thermal breaks. The dual insulated glass door panel provides 59% UV protection, letting you assess surface color and drying progress without opening the door and losing humidity. A pressure valve handles altitude differences, and resistance heating lines on the door frame prevent condensation and keep the gasket flexible during cold cycles. AISI 304 guide sets and hanging rods distribute the full 220.5 lb load evenly across the chamber. Standard adjustable AISI 304 legs level the unit, with an optional 5.2" wheel kit for mobility. A lock and key secures the door. The MATC100TF weighs 308 lb net and is manufactured 100% in Italy.
