The Omcan Pesciugatore® PESTWI4.0 Twin-Chamber Fish Curing Cabinet delivers independent dual-zone curing with a combined 200 + 200 lb (100 + 220.5 lb) capacity. Each chamber operates autonomously, allowing simultaneous curing of different products at different stages without cross-contamination of flavors or aromas.

Independent Twin-Chamber Curing with Dual Climate Zones

Two fully independent curing chambers each feature dedicated temperature control from 32°F to 95°F and relative humidity regulation from 30% to 99%. Each chamber includes 7 shelves and its own glass swing door, enabling operators to manage two separate curing programs simultaneously for maximum production flexibility.

Integrated pH Monitoring and Automated Process Control

Each chamber is equipped with an integrated pH probe that continuously monitors product acidity levels throughout the curing cycle. The automated control system manages humidification, aromatization, and air exchange functions, delivering consistent results while reducing the need for manual intervention and process monitoring.

AISI 304 Stainless Steel Construction with LED-Lit Glass Doors

Constructed entirely from AISI 304 stainless steel inside and out, this cabinet meets the highest standards for food-contact surfaces and corrosion resistance.
