The Omcan Avancini MX-IT-0100-M is a 164 qt heavy-duty spiral dough mixer that handles up to 220 lb of dough or 138 lb of dry flour per batch. For a bakery producing artisan breads, pizza dough, or bagels in volume, this machine takes you from raw ingredients to a fully developed dough in a single timed cycle without any manual intervention once you set the program. The dual-motor system runs the spiral at 2,400-4,500 W and the bowl at 560 W on 208V/3-phase power, drawing 8.3-15.26 A on the spiral and 19.4 A on the bowl. At 992 lb, this is a floor-standing production mixer that anchors your dough station.
Dual-Speed Spiral and Bowl Drive
The spiral hook and fixed stainless steel bowl both rotate simultaneously, which keeps the dough moving through the hook continuously rather than letting it wrap around and ride up the shaft the way single-rotation mixers tend to do with stiff bread doughs. Two speeds let you start slow for initial ingredient incorporation, where flour and water come together without throwing clouds of dry ingredients out of the bowl, then shift to high speed for intensive gluten development. Two built-in timers let you program the working cycle for each speed, so you can set 3 minutes on low and 8 minutes on high and walk away to prep other items. The machine stops automatically when the cycle finishes.
High-Resistance Stainless Steel Bowl and Safety Guard
The bowl and spiral are both high-resistance stainless steel, which handles the repeated stress of dense dough batches without warping or fatiguing over years of daily use. The rear basin guard in stainless steel is both a safety enclosure and a splash barrier. When you open it, the machine stops immediately, so there is no chance of reaching into a spinning bowl. The guard's ergonomic design lets you add ingredients mid-cycle by lifting it just enough to pour in water or inclusions, then dropping it back to resume mixing. Adjustable feet keep the machine level on uneven floors, and two fixed wheels let you roll it aside for cleaning behind the unit.
The overall footprint is 29.1" x 48" x 49.2", and the bowl measures 27.6" diameter x 16.1" deep, wide enough to let the dough develop without climbing up the sides.
