Four burners with manual controls let you create heat zones across the griddle surface. Run the far-left burner at low heat for warming tortillas while the center two burners run full blast for smash burgers, and keep the right burner at medium for eggs. This zone control means you can cook multiple items at different temperatures simultaneously without a separate piece of equipment for each. The 3/4-inch griddle plate holds heat well and recovers quickly when you drop cold product on it.
