The 12-inch blade is hard-chromed high carbon steel, which holds a sharp edge longer than standard stainless blades and resists the corrosion that comes from slicing wet meats and brined products. Cut thickness adjusts from 0.01 in. for paper-thin prosciutto up to 0.59 in. for thick sandwich slices and cheese blocks. The blade spins at 265 RPM, fast enough for clean cuts without tearing delicate meats but controlled enough that thicker items do not bind or shred. This slicer handles all-day slicing volumes for deli meats and can do limited cheese slicing (under 30 minutes per day). It is not rated for frozen meats.
