The UNOX XADA-10FS-GXRS is the gas CHEFTOP-X combi oven for full-service kitchens, banquet operations, and high-volume foodservice programs that want Digital.ID account-sync controls in a workhorse combi. It is the (10) 18" x 26" gas variant in the CHEFTOP-X line, the premium Digital.ID-controlled successor to the MIND.Maps Plus. The 16-inch touch panel runs Digital.ID, an account-based operating system that saves a chef's full profile of programs, settings, and preferences to the cloud so it travels from one oven to another. Voice control through the integrated microphone lets a line cook pull up a program hands-free, and the COOKING.Concierge service connects directly to UNOX corporate chefs for live cooking guidance through the panel.

Moulded AISI 316L Stainless Steel Cooking Chamber

The cooking chamber is moulded from a single piece of AISI 316L stainless steel, with no welds at the corners or seams where the steam environment of daily combi cooking eats through cheaper construction. The 316L alloy contains molybdenum that resists chloride pitting, the failure mode that ages out standard 304 chambers in heavy steam programs. Rounded internal edges and a single-piece construction mean cleanup wipes the chamber down without a brush working into corners or weld seams.

Digital.ID 16-Inch Touch Controls with Cloud Account Sync

The 16-inch capacitive touch panel runs Digital.ID, a cloud-account operating system that holds a chef's full set of programs, settings, and interface customizations server-side. Log in at any Digital.ID oven in the chain and the chef's recipes, preheats, and preferences are already there. Cooking programs created at corporate push to every store in the chain overnight, and the Digital.ID smartphone app lets a manager control and monitor ovens from outside the kitchen. CHEFUNOX picks a food from the library and sets the parameters automatically.

HEY.Unox Voice Control and COOKING.Concierge Access

An integrated microphone enables HEY.Unox voice control, so a line cook holding a pan can ask for a program by name and the oven cues it up without anyone touching the screen. COOKING.Concierge (a Digital.ID Premium subscription feature) connects the kitchen directly to UNOX corporate chefs through the panel for live recipe and troubleshooting support, 30 minutes per month. For ops that need a corporate chef on call without putting one on payroll, this is the difference.

Intelligent Cooking Suite and Intensive Steam

ADAPTIVE.Cooking watches the load and adjusts parameters in real time, so a half load and a full load finish to the same standard. CLIMA.Control reads chamber humidity continuously and holds the setpoint between 10% and 100% in 10% steps. SMART.Preheating sets the preheat temperature and duration automatically based on the next program queued. SENSE.Klean reads how dirty the chamber is and recommends the right wash cycle. STEAM.Maxi produces saturated steam, DRY.Maxi pulls humidity out for crisp finishes, AIR.Maxi runs the multi-fan system with reversing, and CLIMALUX measures and regulates actual humidity in the chamber.

5-Speed Fan Plus AIR.Tornado High-Speed Mode

The fan runs at 5 continuous speeds (2,700 rpm) plus 2 AIR.Tornado high-speed modes (3,600 rpm) for fast-turn baking and rapid recovery on door opens during service. The temperature range is 86°F to 572°F across all modes, with up to 9 cooking steps stored per program and preheat up to 572°F.

Integrated RO.Care Water Filtration

The RO.Care water filtering system is built into the cabinet, so the unit handles its own water treatment without a separate filter on the line. UNOX still recommends water treatment when total hardness exceeds 8 dH on the steam circuit, and RO.Care is the integrated answer to that requirement for buildouts that do not have a kitchen-wide water treatment system upstream.

Triple-Glass Door with LED Chamber Lighting

Triple-glazed glass keeps the outer pane cool enough to brush against without burning a forearm. The drip collection system is integrated in the door and keeps catching condensate even when the door is open during loading.

Install-Ready with Water and Power Drops

Water connects through a 3/4" female NPT inlet with line pressure between 21 and 87 psi. The unit connects through a 3/4" male NPT fitting for natural gas or propane service. Available accessories include Cooking Essentials specialty trays, DET&Rinse detergents, the Ethernet connection kit for hardwired data, and the optional 2-point SOUS-VIDE core probe.
