The UNOX XAVC-0511-EQRM is the CHEFTOP MIND.Maps CONVEX convection oven for cafes, sandwich shops, bakeries, c-store hot programs, and any kitchen that needs reliable convection baking and roasting without steam capability. It is the (5) GN 1/1 electric variant in the CHEFTOP CONVEX line, the entry-tier line in UNOX's CHEFTOP family, positioned for kitchens that need convection without the steam capability of the MIND.Maps Plus combi version. AIR.Plus technology runs multiple fans with reverse gear and 2 speed settings to drive air across the chamber with the reverse-gear pattern that eliminates the single-direction hot-spot pattern of basic convection ovens.

AIR.Plus Multi-Fan Convection

AIR.Plus is UNOX's multi-fan convection system with reverse gear and 2 speed settings. The reverse gear flips the airflow direction at intervals so the airflow does not always push from the same side, eliminating the hot-spot pattern that single-direction convection ovens build up across the pan load. The 2-speed setting lets the operator dial down for delicate items like custards and pastries that strip moisture under high airflow.

DRY.Maxi Moisture Extraction

DRY.Maxi rapidly removes humidity from the cooking chamber in an ultra-short timeframe, so the operator gets crisp finishes on roasts, baked items, and breaded products without waiting for the chamber to naturally vent. This is the same DRY.Maxi technology UNOX puts in its premium combi ovens, ported to the CONVEX convection-only platform.

ADAPTIVE.Cooking and 384 Stored Programs

The 9.5-inch capacitive touch panel runs 384 stored programs and includes ADAPTIVE.Cooking, which automatically regulates the cooking parameters in real time so a half load and a full load finish to the same standard. SMART.Preheating sets the preheat temperature and duration automatically based on the next program queued. MULTI.TIME runs up to 10 cooking processes at the same time on the same load, so a line cook can stage multiple items without timer juggling.
