The Alexander Industries E-400 is an end loading aluminum bun pan rack that holds 11 full-size 18 x 26 in. bun pans on 5 in. centers. It is the standard open rack for bakeries, pizzerias, school kitchens and commissaries that need to stage sheet pans between the prep table, the oven and the cooling area. The wide 5 in. slide spacing gives you room for tall product, covered pans or 18 x 26 in. sheet pans loaded with bread loaves and layer cakes. The rack rolls on four swivel casters and arrives knocked down for assembly, with factory assembly available as an option.

6061-T6 Aluminum Extrusion Frame

Uprights and cross members are 1 in. square 6061-T6 aluminum extrusion, and each tray runner is a 1-7/16 x 1-7/8 in. extrusion of the same alloy. Aluminum will not rust in a walk-in cooler or under a daily hose-down, and the extruded runner has enough section to carry a fully loaded pan without sagging. Corners are tied together with .100 in. thick 3003-H14 aluminum brackets and aircraft quality aluminum rivets, so the frame stays square after years of being pushed through doorways.

5 In. Ball Bearing Swivel Casters

Four 5 in. swivel casters with ball bearings and non-marking hard rubber tires let one person move a full rack across tile or sealed concrete without leaving scuffs. Two locking casters can be added when the rack parks next to an oven or in a proof box.

Optional Accessories

Alexander offers donut bumpers to protect walls and door frames, a tray stopper to keep pans from sliding out the open back, a sanitary rack cover for holding uncovered product, and a pair of locking casters. All fit this frame without modification.
