Customizable 4-Phase Blast Chilling Cycles with Core Probe Control
Operators can program up to four distinct phases for each blast chilling cycle on the ABT-20US. Each phase can be set by time, room temperature, product temperature, and ventilation speed. This level of control is important for kitchens handling a range of products. For example, a delicate mousse needs a different chilling profile than a braised protein or a dense pastry. Defining each phase ensures every product is chilled at the right rate for its structure. The unit can run cycles by time or by core temperature probe, which is included as standard. When the probe is inserted, the unit automatically switches to probe mode. At the end of each new cycle, the recipe is saved automatically, creating a library of proven programs for future use.
3-Fan Evaporator with Variable Air Speed Control
The ABT-20US features a 3-fan evaporator system with air speed adjustable from 0.7 to 7 meters per second using the control panel. Variable fan speed lets operators control how much cold air moves across product surfaces during each phase. High air velocity speeds up heat removal for dense or high-mass items. Lower speeds protect delicate surfaces such as glazed pastries, sauces, or plated items from drying or surface damage during chilling. When the door is opened, the fans stop immediately to prevent temperature loss and maintain product quality during loading and unloading.
AISI 304 Stainless Steel with 7" Insulation and Advanced Construction
Both the interior and exterior are made from AISI 304 stainless steel. Internal rounded corners make cleaning easier and help prevent bacteria from building up in hard-to-reach spots. The walls, top, and floor have 7-inch insulation to retain cold during chilling and freezing. The interior has an anticorrosion cataphoresis treatment for added durability. The heated frame and threshold, three-chamber magnetic door seal, and compensation valve keep the chamber sealed under different temperature and pressure conditions. The evaporator wall is accessible for cleaning and maintenance. Internal LED lighting gives clear visibility of the chamber contents. A drain is required for water condensation.
