The Asber AEHC-18 is a half height combination heating and proofing cabinet that covers two jobs in one insulated footprint: hold cooked food hot for service, or proof dough under controlled warmth and humidity. It carries up to (18) 18 x 26 In. sheet pans on fixed aluminum lip load channels, and runs on a standard 115V circuit at 2.0 kW.

Heat Mode to 180°F, Proof Mode to 95% Humidity

Switch modes to match the day: heat mode holds internal temperatures up to 180°F for service-ready food, while proof mode delivers up to 95% relative humidity at 110°F, the consistent warm-and-wet conditions that make dough rise on schedule instead of on its own time. Forced air circulation moves heat and humidity evenly from top rack to bottom, and an extra large water reservoir runs long proofing cycles without constant refills. Removable analog controls with a digital display are simple to run, service, and calibrate.

Insulated Stainless Cabinet With Lexan Window

Heavy duty stainless steel construction shrugs off corrosion and daily bumps, the fully insulated body holds temperature efficiently, and the Lexan window in its aluminum frame shows you the racks without opening the door and dropping the humidity. A tight fitting door gasket seals the environment, corner bumpers protect both cabinet and doorways in transit, and the bottom loading design makes tray insertion natural.
