With this proofing and holding cabinet, you can proof your dough and keep food hot and ready to serve, all in the same cabinet. This unit features a clear Lexan door that is field reversible with left hand hinges. Adjustable heating mode setting keeps cabinet temperatures up to 180°F (80°C) while proof mode adjusts humidity between 30% and 95% and temperature up to 115°F (46°C). This model has corner bumpers and an easy to read LED thermometer. The control drawer is removable for easy cleaning and maintenance. This full size model accommodates 36 full size sheet pans with 1 1/2" clearance between slides. This cabinet is supplied with a 6.3' NEMA 5-15P cord with a cable cover to provide additional electrical protection and safety.
