The CMA Dishmachines EST-3-D-EXT Door-Type Dishwasher
The CMA Dishmachines EST-3-D-EXT is a low temperature, energy saving door type dishwasher with a three door, straight-thru layout and an extended height opening, washing 40 racks, or 160 covers, per hour on only 1.09 gallons of water per cycle. It fits restaurants and institutional dishrooms that feed a steady mix of plates, trays, and tall prep ware through one single rack machine. Sanitizing is chemical at a required 120°F water temperature, so the unit runs on a 115V, 16 amp circuit with no booster heater and no steam clouding up your dish area.
Three Door Straight-Thru Design
With doors on three sides of the chamber, your crew reaches the interior from the front and from both pass-through sides, which turns wash arm checks, stuck racks, and nightly tank cleaning into quick jobs rather than contortion acts. The straight-thru path lines up with a standard soiled-to-clean dishtable run. Each door opening measures 20-1/2 inches under the extended height wrapper, tall enough for sheet pans and stockpots, and total height with the doors open is 80-1/2 inches on a compact 25-3/4 inch by 25-3/4 inch footprint.
Low Temperature Chemical Sanitizing
Instead of the thermal rinse a high temperature machine buys with a booster heater and heavy wiring, the EST-3-D-EXT sanitizes chemically with 120°F incoming water, 140°F recommended. Its unique sanitizing system delivers instant sanitation and eliminates chlorine damage to the machine itself, so the sanitizer that protects your guests is not slowly eating your equipment. The 90 second cycle runs a 53 second wash, a 15 second rinse, and a 22 second dwell from a 1.09 gallon wash tank, with a 1 HP motor pushing 52 gallons per minute through upper and lower stainless steel wash arms.
Power Drain and Scrap Management
A power drain saves space, eliminates the noisy solenoid and external sump, and empties the machine quickly, keeping cycle turnaround tight through a rush. A self cleaning pump screen heads off the clogs that lead to service calls, the built-in Poly Pro scrap accumulator catches food soil before it reaches the drain, and a built-in strainer at the water inlet protects the water valve. An airgap fill system guards the incoming supply as the tank refills.
Built-In Chemical Pumps and Deliming System
Top mounted controls carry built-in chemical pumps that meter detergent, rinse aid, and sanitizer at the proper rates, plus a deliming system for the scale hard water leaves behind; CMA recommends softening the supply to 3.5 grains per gallon or less. Auto start/stop runs each cycle identically no matter who loads the machine. All stainless steel construction, including the pump impeller and scrap tray, handles years of hot detergent water, and two 20 inch by 20 inch dishracks are included so the machine works from the first shift.
