The CMA Dishmachines S-B Pot and Pan Washer
The CMA Dishmachines S-B Energy Mizer is a low temperature, double rack pot and pan washer for high-volume sculleries that need serious throughput without a high-voltage electrical service. Its 44-1/4 inch wide chamber washes two racks side by side, so it automatically cleans, rinses, and chemically sanitizes 80 racks or 320 covers per hour on the same 90 second cycle a single rack machine uses, and it does it all on a 115 V, 30 A connection.
Low Temperature Chemical Sanitizing
Where a high temperature machine relies on booster and tank heaters to reach a scalding final rinse, the S-B sanitizes with chemicals from 120°F incoming water, with 140°F recommended for best results. No onboard heaters means no steam pouring into your dishroom during a Friday close. The pump purging system clears soil and chemical carryover from the lines during the 30 second rinse, so results stay consistent from the first rack of prep pots to the last sauté pan of the night. Each double rack cycle draws 3.0 gallons, working out to 120 gallons per hour at full pace.
All Stainless Steel Construction
Tank, cabinet, and spray system are stainless steel end to end, including the pump impeller, which stands up to the caustic detergents that corrode lesser materials. Upper and lower stainless steel wash arms carry reinforced end caps and sit on specially designed pull-pins, so your closing crew can pull both arms for cleaning in seconds without tools. Behind them, a 1 HP wash pump moves a full 136 gallons per minute across both racks at once.
Built-In Chemical Pumps and Deliming System
Top mounted controls include built-in chemical pumps that meter detergent and sanitizer automatically, which protects you from both under-dosing that fails a health check and over-dosing that burns money. A deliming system fights hard-water scale before it chokes the spray nozzles, and auto start/stop launches the cycle as soon as the door closes.
27 In. Door Opening and Scrap Handling
The 27 inch high door opening takes stock pots, mixing bowls, and sheet pans in standard 19-3/4 by 19-3/4 inch racks, two racks at a time. An integrated scrap tray with Poly Pro scrap accumulator intercepts food soil before it hits the drain, while a built-in strainer on the water inlet keeps debris out of the fill valve. The straight-thru layout drops into an in-line dishtable run at a standard 34 inch table height.
