Low Temperature Chemical Sanitizing

Where a high temperature machine relies on booster and tank heaters to reach a scalding final rinse, the S-B sanitizes with chemicals from 120°F incoming water, with 140°F recommended for best results. No onboard heaters means no steam pouring into your dishroom during a Friday close. The pump purging system clears soil and chemical carryover from the lines during the 30 second rinse, so results stay consistent from the first rack of prep pots to the last sauté pan of the night. Each double rack cycle draws 3.0 gallons, working out to 120 gallons per hour at full pace.
