The Comstock-Castle 10201 is a 30 inch wide countertop gas griddle and hotplate combination from the 10 Series, built in Quincy, Illinois for diners, food trucks and small lines that need a flat top and a couple of open burners in one 30 inch footprint. A 20 inch manual griddle section runs on 2 burners and a 10 inch hotplate section carries 2 open burners for stock pots and saute pans. All 4 burners are cast iron H pattern rated at 12,000 BTU, 48,000 BTU total, and the unit ships set up for natural gas or propane as you specify.

On a short line this replaces two pieces of equipment. Eggs and hash browns run on the griddle while a pan of gravy or a pot of grits sits on an open burner next to it, with one gas connection and one footprint on the counter.

20 Inch Griddle With 1/2 Inch Polished Steel Plate

The griddle plate is 1/2 inch highly polished steel, 20 inches wide by 16 inches deep for 320 square inches of cooking surface. A 2 inch stainless splash guard wraps the back and sides, and a front cold zone grease trough with a large drain slot feeds a seamless, large capacity grease drawer. If you run heavier product, 3/4 inch and 1 inch plates and chrome plating are factory options.

2 Open Burners at 12,000 BTU Each

The hotplate section gives you 2 cast iron H pattern burners at 12,000 BTU apiece. That is enough for a 20 quart stock pot held at a simmer or a saute pan brought up to heat between griddle batches, without tying up griddle space with a pot.

Manual Brass Gas Valves With Standing Pilots

Every burner has its own brass gas valve with an automatic standing pilot, so the griddle and each open burner are set by hand. Nothing to calibrate and nothing to fail but a valve. The 10T201 is the same unit with thermostatic control on the griddle. Pressure regulators are factory set for the gas you order, 4 inch WC natural gas or 10 inch WC propane, on a 3/4 inch NPT manifold.

Welded Stainless Steel Frame, 10 Inches High

The body is corrosion resistant stainless steel on a welded frame with an aluminized steel back panel, 22.5 inches deep and 10 inches high so it sits low on a counter or equipment stand. Clearance to non-combustible surfaces is zero at the sides and rear; to combustible surfaces it is 6 inches on the sides and 6 inches at the rear. The 10 Series is built to match up with Comstock-Castle Economy charbroilers and hotplates.
