The Comstock-Castle 11301B Gas Griddle
The Comstock-Castle 11301B is a 40 inch wide countertop gas griddle, hotplate and cheesemelter combination from the 11 Series, built in Quincy, Illinois for diners and short lines that want a flat top, open burners and a plate finisher in one 40 inch footprint. A 30 inch manual griddle runs on five cast iron I pattern burners at 10,000 BTU, a 10 inch hotplate section carries two open burners at 12,000 BTU, and a raised cheesemelter sits above the cooktop. 74,000 BTU total, shipped set up for natural gas or propane as you specify.
This is the budget series: the same welded stainless frame as the 10 Series, with lighter 10,000 BTU griddle burners and a 15 inch body height to make room for the cheesemelter. It is not ETL design listed, which matters if your local inspector requires a listing mark.
30 Inch Griddle With 1/2 Inch Polished Steel Plate
The griddle plate is 1/2 inch highly polished steel, 30 inches wide by 16 inches deep. A 2 inch stainless splash guard is standard and a front cold zone grease trough drains through a large slot into a seamless grease drawer. 3/4 inch and 1 inch plates and chrome plating are factory options.
Two Open Burners and a Raised Cheesemelter
The two open burners are cast iron H pattern at 12,000 BTU each, enough for a sauce pot or a saute pan beside the griddle. Above the cooktop, the cheesemelter uses a stainless steel wire mesh radiant that throws heat evenly downward to melt cheese or brown a plate, with rear drain plates that keep grease from dripping onto the rack.
Manual Brass Gas Valves With Standing Pilots
Every section is set by hand through brass gas valves with automatic standing pilots. Pressure regulators are factory set for the gas you order, 4 inch WC natural gas or 10 inch WC propane, on a 3/4 inch NPT manifold.
Welded Stainless Steel Frame, 15 Inches High
Corrosion resistant stainless steel on a welded frame with an aluminized steel back panel, 22.5 inches deep and 15 inches high. Clearance to non-combustible surfaces is zero at the sides and rear; to combustible surfaces it is 6 inches on the sides and 6 inches at the rear.
About Comstock-Castle
Founded in 1838 in Quincy, Illinois, Comstock-Castle is America's oldest stove manufacturer still in operation. The company grew from a frontier hardware shop into a grey-iron foundry that helped make Quincy the nation's stove-production hub by the early 1900s. Seven generations later, Comstock-Castle still designs and union-builds commercial cooking equipment in the same Quincy facility, with ranges, griddles, charbroilers, fryers, and modular cook lines configurable from 24 to 72 inches to match your menu. Built to outlast the kitchens that put them on the line.
