The Comstock-Castle EG30 Gas Griddle
The Comstock-Castle EG30 is a 30 inch wide countertop gas griddle from the E Series, built in Quincy, Illinois for diners, breakfast lines and small kitchens that want a manual flat top with a 20 inch cook depth. It fires four 16,000 BTU burners for 64,000 BTU total across 600 square inches of cooking surface, and ships set up for natural gas or propane, whichever you specify.
At 30 inches it fits a short countertop or an equipment stand next to a charbroiler. The E Series griddles are built to match up with Comstock-Castle E Series charbroilers, so a griddle and broiler sit flush side by side with the same 28.5 inch depth and 9 inch body height.
5/8 Inch Polished Steel Plate With 20 Inch Cook Depth
The standard plate is 5/8 inch highly polished steel, thick enough to hold heat through a round of pancakes or smash burgers without the surface temperature falling off. A 3 inch splash guard runs around the back and sides, and a 4 inch front cold zone with a 3.5 x 1 inch grease drain slot carries drippings into a seamless, deep, removable grease drawer. If you cook heavier loads, 3/4 inch and 1 inch plates, chrome plates and grooved plates are factory options.
Brass Gas Valves With Standing Pilots
Heat is set by hand through brass gas valves with automatic standing pilots. That is the simplest control a griddle can have: no thermostat to calibrate, nothing to fail but a valve. Pressure regulators are factory set for the gas you specify, 4 inch WC for natural gas or 10 inch WC for propane, and the manifold is 3/4 inch NPT. If you want set-and-hold temperature, the EG30-T version of this same griddle adds throttling thermostats.
Welded Stainless Steel Body With 3 Inch Bull Nose Landing
The frame is heavy gauge welded steel with a stainless steel finish, and a 3 inch wide stainless bull nose landing runs across the front. That ledge is a working surface for plates and spatulas and it shields the knobs from being bumped by a passing sheet pan. Clearance to non-combustible surfaces is zero on the sides and rear; to combustible surfaces it is 4 inches on the sides and 5 inches at the rear.
About Comstock-Castle
Founded in 1838 in Quincy, Illinois, Comstock-Castle is America's oldest stove manufacturer still in operation. The company grew from a frontier hardware shop into a grey-iron foundry that helped make Quincy the nation's stove-production hub by the early 1900s. Seven generations later, Comstock-Castle still designs and union-builds commercial cooking equipment in the same Quincy facility, with ranges, griddles, charbroilers, fryers, and modular cook lines configurable from 24 to 72 inches to match your menu. Built to outlast the kitchens that put them on the line.
