It fires four 16,000 BTU burners for 64,000 BTU total across 600 square inches of cooking surface, and ships set up for natural gas or propane, whichever you specify.

At 30 inches it fits a short countertop or an equipment stand next to a charbroiler. The E Series griddles are built to match up with Comstock-Castle E Series charbroilers, so a griddle and broiler sit flush side by side with the same 28.5 inch depth and 9 inch body height.

5/8 Inch Polished Steel Plate With 20 Inch Cook Depth

The standard plate is 5/8 inch highly polished steel, thick enough to hold heat through a round of pancakes or smash burgers without the surface temperature falling off. A 3 inch splash guard runs around the back and sides, and a 4 inch front cold zone with a 3.5 x 1 inch grease drain slot carries drippings into a seamless, deep, removable grease drawer. If you cook heavier loads, 3/4 inch and 1 inch plates, chrome plates and grooved plates are factory options.

Throttling Thermostats, 150 to 450 Degrees F

The EG30-T runs two throttling thermostats with a 150 to 450 degree F range, so you set a surface temperature and the valve holds it instead of you nudging a knob between batches. Brass gas valves and automatic standing pilots sit behind the control panel. Pressure regulators are factory set for the gas you order, 4 inch WC for natural gas or 10 inch WC for propane, with a 3/4 inch NPT manifold.

Double Wall Insulated Stainless Steel Body With 4 Inch Bull Nose Landing

The body is corrosion resistant stainless steel welded over angle iron and aluminized inner framing, with double wall construction and heavy insulation so the sides run cooler than a single-skin griddle. It stands on 4 inch heavy duty stainless pipe legs with adjustable feet, and a 4 inch wide stainless bull nose landing runs across the front. That ledge is a working surface for plates and spatulas and it shields the knobs from being bumped by a passing sheet pan. Clearance to non-combustible surfaces is zero on the sides and rear; to combustible surfaces it is 4 inches on the sides and 5 inches at the rear.
