The Comstock-Castle EG48T-PPG is a 48 inch wide countertop gas potato pancake griddle with a thermostatic control and a 24 inch cook depth, built in Quincy, Illinois for delis, diners and specialty breakfast operations that fry large batches of latkes, hash browns and pancakes. The extra depth is the point. A standard 20 inch plate holds one row of large pancakes; the 24 inch surface on this unit gives you room for a second row or for pushing finished product back to hold while the next batch fries up front.
1/2 Inch Polished Steel Plate, 24 Inch Deep
The plate is 1/2 inch highly polished steel. Thinner than a standard griddle plate, it heats faster and recovers quickly after a batch of cold shredded potato hits it, which is what you want for high-volume frying rather than searing. A 2.5 inch stainless steel splash guard runs on all four sides as standard, with taller sides available, so oil spatter stays on the griddle instead of the wall behind it.
Throttling Thermostats, 150 to 450 Degrees F
The EG48T-PPG carries two throttling thermostats adjustable from 150 to 450 degrees F, holding the plate within plus or minus 20 degrees of set point. That matters on a potato pancake line, where a plate that drifts hot scorches the outside before the center cooks through. Brass gas valves with automatic standing pilots back up the thermostats, and the regulator is factory set for the gas you order, 4 inch WC natural gas or 10 inch WC propane, on a 3/4 inch NPT manifold.
Welded Stainless Steel Frame With 4 Inch Bull Nose
Construction is corrosion resistant stainless steel on a welded frame with insulated side panels, a stainless front control panel and a 4 inch wide bull nose landing across the front that protects the knobs and gives you a place to set a spatula. Clearance to non-combustible surfaces is zero at the sides and rear; to combustible surfaces it is 6 inches on the sides and 6 inches at the rear.
