The spit runs 30 inches long and takes a cone up to 16 inches in diameter, enough meat to carry a full day of service without a mid-shift rebuild. Since stacking a new cone is the slowest job in the shop, that capacity translates directly into more carving time per shift.
Four Independently Controlled Infrared Burners
Infrared burners at 13,000 BTU each radiate heat straight into the meat instead of heating the air around it, which crisps the carving face fast and recovers instantly after each shave. Each burner has its own control knob, so as the cone shrinks through the day you shut zones down from the top and bottom and keep only the burners that still face meat, saving gas and protecting the core from drying out.
Adjustable Distance Base and Steady Rotation
The spit turns at 4 revolutions per minute for even color on every face, and the adjustable base moves the cone closer to the burners for browning or back for slower roasting. Temperature spans 122°F to 572°F, and a stainless steel carving shovel is included to catch meat as it falls.
Grease Collection and Cleanup
An oil inflow drain routes rendered fat into a collector drawer that slides out and dumps in seconds, and the all stainless steel body wipes clean once the spit is out. A gas conversion kit comes in the box, so the unit runs on natural gas or liquid propane and connects through a 1/2 inch gas inlet.
