The Cookline CGG-36T-HD is a 36 inch heavy-duty countertop gas griddle with thermostatic controls, built for diners, burger operations, and breakfast lines where the flat top runs from open to close. Thermostatic Control From 200°F to 500°F

Each burner has its own thermostat that holds the plate at a set temperature in 50°F steps across a 200°F to 500°F range. That is the practical difference from a manual griddle: eggs at the low end, smash burgers at the high end, and neither drifts as the load changes, because the thermostat feeds gas only when the plate actually needs it. Cool-to-the-touch fiberglass nylon knobs stay handleable even after hours over a hot plate.
