The Cookline CSM-36-RM Gas Salamander Broiler
The Cookline CSM-36-RM is a 36 inch gas salamander broiler that gives a busy line the overhead finishing power of a 30,000 BTU infrared burner in a package that mounts above your range. It is built for the restaurant that needs to melt cheese on onion soup crocks, brown casserole tops, toast open-faced sandwiches, and put a final sear on steaks and chops without tying up oven space during the rush.
Infrared Broiling Power
Unlike conventional broilers that need a long preheat before they will brown anything, the infrared burner reaches working temperature almost instantly, so you can fire it when the ticket prints rather than leaving it burning gas all day. The extra large burner covers the full cooking area, which means the crock at the edge of the rack browns at the same pace as the one in the center and you are not rotating pans mid-broil.
Rack Adjustment and Control
Three rack positions let you pull the grid close to the burner for fast searing or drop it lower for gentler melting and holding. Two knobs split the burner into independently fired zones, so you can run one side at full output for browning while the other idles for holding, or shut half the unit down during slow periods to save gas.
Installation and Mounting
The included range mounting kit lets you set the broiler directly on top of a 36 inch range, stacking your finishing station over equipment you already own instead of claiming new counter or wall space. That vertical arrangement keeps plates moving on the same station where the food comes off the burners, so a cook can sear a steak below and finish it with melted butter or a browned crust above without taking a step. The gas connection is a 3/4 inch NPT fitting at the rear, keeping the plumbing out of the way of the cooking area.
Construction and Cleanup
The front and sides are stainless steel over a welded frame, so the surfaces that face the line wipe down quickly and stand up to years of daily heat cycling. Drippings fall to an oil collector at the bottom of the unit that empties in seconds at close, and the chrome-coated wire grid resists sticking so burnt cheese releases with a brush instead of a scraper.
Fuel Flexibility
The broiler ships configured for natural gas and converts easily to propane and back, so it can move with you between buildings with different gas service without being replaced.
