A standby stainless steel pilot keeps ignition instant, and a millivolt control valve runs the burner without needing an electrical connection.
Thermostatic Control With Fast Response
A prompt-response thermostat holds the water where you set it across a 200°F to 400°F range, easing back as the pot recovers so you are not riding the knob between orders. The open pot design includes a cold zone below the heat, where flour and starch settle away from the rolling water instead of scorching against the bottom.
Water and Starch Management
Starchy water is the daily headache of pasta service, and this cooker drains it two ways. A starch skimming drain pulls off the foamy surface water during service, and a 1-1/4 inch full port drain valve empties the whole pot fast at close. Fresh water feeds in through a 1/2 inch inlet, so refilling does not mean carrying pots from the tap.
Mobility and Installation
Four casters, two of them locking, let one person roll the cooker out for cleaning behind the line and lock it back in place. Legs are available as an option if your health department or layout calls for a fixed installation.
