The IKON IGF-40/40 LP is the liquid propane version of the split pot floor fryer, built for kitchens running LP gas instead of natural gas. Four 30,000 BTU heat tubes produce 120,000 BTU total across two independent fry tanks, each holding approximately 40 pounds of oil for a total capacity of 72 to 78 pounds. The split design lets you run different temperatures on each side or shut one tank down when volume drops. At 20.9 inches wide, it fits the same line position as a standard fryer while giving you two independent frying stations. The tube heat exchange design recovers temperature fast after each batch drop, and the large cold zone below the tubes traps crumbs and breading to extend oil life.

Two Independent Split Tanks with Individual Gas Controls

The IGF-40/40 divides its frying capacity into two separate tanks, each with its own millivolt gas control system. You can run both tanks at different temperatures at the same time, so one side can hold at 325 degrees for delicate fish fillets while the other runs at 375 for french fries or chicken. When volume drops during slower periods, you can shut one tank down entirely and save gas while the other keeps working. Each tank holds approximately 40 pounds of oil and is served by two of the four 30,000 BTU heat tubes, giving each side 60,000 BTU of independent heating power. The two millivolt snap-action thermostats each control their tank between 200 and 400 degrees Fahrenheit without requiring an electrical connection. Because the tanks are separate, a full oil change on one side does not interrupt frying on the other.

Peened Stainless Steel Tanks on 5-Inch Casters

Both fry tanks are stainless steel that has been fully peened (pressure blasted) to create a smoother interior surface. The peened finish reduces the rough spots where oil residue and polymerized buildup tend to grip, so boil-outs clear each tank more effectively and daily wipe-downs go faster. Below the heat tubes, a large cold zone at the bottom of each tank traps breading, crumbs, and food particles that fall off during frying. Because these particles settle below the active heat zone, they do not continue to cook and carbonize in the hot oil, which means your oil stays cleaner longer and you get fewer off-flavors in the finished product. A 1-1/4 inch full-port drain valve on each tank lets you drain the oil completely and quickly when it is time for a change. A drain pipe holder is attached to the inside of the door for easy access.
