The LBC LMO-Max-G Roll-In Rotating Rack Oven
The LBC LMO Max-G is a gas roll-in rotating rack oven from LBC's Kitchen Series, built for bakeries, commissaries, and high-volume kitchens that bake by the rackful. It rolls a full rack of product into a rotating chamber and bakes it evenly from every side, fitting under a standard 6 ft. 6 in. hood so it drops into a typical production line without a custom vent.
Baking Capacity And Rotation
A single rack holds up to 16 full 18 by 26 in. sheet pans at 3 in. spacing, 12 pans at 4 in., or 8 pans at 6 in., so you size the rack to the product, from cookies and baguettes to full sheet trays. A gear-drive rotation system with a heavy-duty self-adjusting clutch turns the rack smoothly and keeps it constrained top and bottom, so every pan sees the same heat and comes out the same color.
Steam, Heat And Controls
A self-contained, air-heated steam system hydrates the bake without a pressure vessel, and 125,000 BTU/hr of natural-gas input through a high-efficiency heat exchanger and a 3/4 HP top-mounted convection motor drives fast, even baking. The standard control holds 0 to 525°F with individual up and down buttons for time, temperature, and steam, large displays, blower-delay and pulse-blower settings, a 99-minute timer, and 40 preset recipes with six quick-select buttons. An optional Cook-and-Hold control adds bake-or-hold modes and three steam-hydration levels.
Build And Visibility
The interior and exterior are stainless steel, full-view double-pane windows and bright xenon lighting let bakers watch the bake without opening the doors, and the double doors open simultaneously and latch shut to prevent accidental opening during rotation. Solid full-length hinge shafts carry the doors through years of heavy production.
Installation And Utilities
The oven measures 44.8 in. long by 43 in. wide by 77 in. tall, ships assembled, and passes through a 42 in. opening (36 in. with some disassembly). It runs on a dedicated 120-volt, 15-amp circuit with a NEMA 5-15R receptacle, a 1/2 in. NPT gas connection at 5 to 14 in. w.c., a cold-water line, and a 3/4 in. NPT drain. It must be installed under a hood on a noncombustible floor, and factory-authorized start-up is required.
