The Omcan 43554 is a compact non-insulated proofer cabinet with a 10-pan capacity for 18" x 26" sheet pans. At just 32 inches tall, it fits on a counter or equipment stand without taking up the vertical space of a full-height unit. This is sized for small bakeries, cafes, and restaurants that proof smaller batches of dough throughout the day rather than running full racks. It ships with a cutting board for added prep functionality on top of the cabinet.
Dual Proof and Heat Control with 30% to 80% Humidity Range
The electric control box (sold separately as item 39528, 120V/60Hz/1Ph, 15A) provides dual proof and heat control with adjustable humidity from 30% to 80% and a maximum temperature of 180°F. An LED temperature display on the accessible control panel lets you monitor conditions at a glance without opening the door and disrupting the proofing environment. The internal water pan generates humidity while a drip pan underneath catches condensation so moisture does not pool on the floor around the unit. An air baffle and circulating air blower distribute heat and humidity evenly across all shelf positions, which prevents the common problem of dough proofing faster on the top shelves than the bottom.
Clear Door with Aluminum Framing and Caster-Mounted Base
The clear polycarbonate door with aluminum framing lets you check proofing progress visually without opening the cabinet and losing your carefully controlled atmosphere. Four casters, with two locking brakes on the front, make it easy to roll the proofer from the prep area to the oven line when dough is ready.
