The Omcan 44269 is a 107-quart heavy-duty spiral dough mixer with a tilting head and removable bowl, built in Italy for bakeries, pizzerias, and bread production operations that mix large batches of stiff doughs throughout the day. With a maximum dough capacity of 132 lb and a max dry flour capacity of 82 lb, this mixer handles full-batch bread, pizza, and bagel doughs that would stall smaller planetary mixers. The two-speed spiral design keeps dough temperatures lower than planetary mixing because the spiral hook works the dough more efficiently, developing gluten structure with less friction and less total mix time.
Dual-Speed Spiral with 104/208 RPM and Automatic Cycle
First speed runs the spiral at 104 RPM for initial hydration and incorporation, where you want the flour and water to come together without overworking the gluten. Second speed ramps to 208 RPM for development, stretching and folding the dough to the window-pane stage. The bowl rotates at 21 RPM in the opposite direction of the spiral, continuously feeding fresh dough into the hook's path. An automatic cycle function lets you program the mix sequence so your baker can load the bowl, press start, and walk away to scale the next batch.
