One side cures salami, soppressata, and other fermented products through the full cycle of salting, stewing, smoking, aromatization, drying, and seasoning. The other side dry-ages beef primals, bresaola, and whole muscle cuts. Each chamber holds 220.5 lb, giving you 440.9 lb of total capacity without dedicating separate floor space, plumbing, and electrical to two standalone units. This model includes a rear glass panel, which turns the cabinet into a display piece for retail butcher shops, hotel lobbies, or restaurant dining rooms where guests can watch the curing and aging process from both sides.

Four standard probes — humidity, ambient temperature, evaporator/defrost, and condenser — feed continuous readings to the display. An optional pre-calibrated pH probe (Item 41263) connects to the PLC for real-time acidity tracking during salami fermentation. The Fumotic® system handles both humidity regulation and cold smoke or aroma delivery without combustion, preserving the organoleptic properties of your product.
