Omcan 46020 21 In. Propane Floor Fryer, 70 Lb Oil Capacity, 150,000 BTU, Two Baskets

SKU46020 BrandOmcan

The Omcan 46020 Commercial gas fryer

This Omcan propane floor fryer, model CE-CN-0032-FP, puts 150,000 BTU under a 70 pound oil tank in a 21 inch wide chassis, built for preparing large volumes of fried food in busy restaurants, fast food businesses, and cafeterias. Five cast iron vertical burners supply the heat, and the thermostat holds your set point anywhere from 200 to 400°F. It burns propane; the gas inlet is a 1/2 inch NPT fitting at the lower rear. Installation is a job for your gas fitter: set the fryer, level it on the 6 inch adjustable legs, make the gas connection, and light the standby pilot. A stainless steel tank cover, item 47453, and swivel and fixed casters, items 66198 and 66199, are available as optional accessories.

Five Cast Iron Vertical Burners, 30,000 BTU Each

The heat comes from five vertical cast iron burner tubes at 30,000 BTU per hour apiece, 150,000 BTU in total. Long lasting baffles mounted in the heat exchange tubes provide maximum heating and combustion efficiency.

Thermostatic Control from 200 to 400°F

The thermostat holds any set point between 200 and 400°F: once the oil reaches the set temperature the gas to the burners shuts off, and the burners cycle on and off to maintain it while the pilot stays lit. A stainless steel standing pilot provides a ready flame whenever heat is required. The integrated gas control valve blocks gas to the main burners until the pilot is established and shuts off all gas automatically if the pilot flame goes out, and a temperature limit shuts off all gas flow if the fryer exceeds 450°F.

70 Pounds of Oil with a Full-Port Drain

The welded 16 gauge stainless steel tank holds 70 pounds (31.8 liters) of oil and has a smooth machine finish for easy cleaning. When the oil is spent, a full-port 1-1/4 inch NPT drain valve at the front empties it quickly into your container.

Stainless Front, Galvanized Sides

The front panel and door are stainless steel, while the sides and back are galvanized steel. Two chromed baskets with plastic-coated handles are included, and a basket hanger at the rear of the tank holds a basket between loads.

Sized for the Fry Station

At 21 inches wide by 30.2 inches deep by 46.5 inches tall on 6 inch adjustable stainless steel legs, it can be installed in a battery of appliances or on its own and levels front-to-back and side-to-side on an uneven floor. Net weight is 172 pounds.

The Omcan 46020 Commercial gas fryer

    About Gas Fryers

Commercial gas fryers are essential in most professional kitchens. They heat quickly, recover fast between batches, and usually cost less to run than electric models. Choose countertop or floor models based on your menu and volume. For a small cafe, a compact countertop fryer may be all you need. High-volume restaurants should stick with floor models or industrial gas fryers that can handle nonstop use. Check if your kitchen uses natural gas or propane before you order.

    Common Types and Configurations

    • Gas countertop fryers: Compact units that sit on a prep counter. Good for smaller operations or as a supplemental fryer station.
    • Gas floor fryers: Full size units with higher oil capacity and output. Standard in high-volume restaurant kitchens.
    • Commercial propane deep fryers: Run on propane instead of natural gas. Common in food trucks, outdoor catering, and locations without a natural gas line.
    • Small commercial gas fryers: Compact countertop units for lower volume operations or tight kitchen spaces.
    • Double vat fryers: Two separate vats allow you to fry different items simultaneously without flavor transfer.

What to Look at Before You Buy

    • Oil capacity: Measured in pounds. Countertop fryers hold 15 to 30 pounds. Floor models range from 40 to 80 pounds or more. Choose a size that matches your volume.
    • BTU output: Higher BTU means faster heat recovery. This matters in high-volume kitchens where the fryer runs nonstop during service.
    • Gas type: Most fryers use natural gas. If you need a commercial gas deep fryer that runs on propane, check that LP conversion is available before you order.
    • Number of vats: Single vat fryers are fine for simple menus. Double vats let you fry different items at once without cross-contamination.
    • Filtration system: Some fryers have built-in oil filtration. This extends oil life and cuts operating costs.
    • Controls: Manual controls are simple and reliable. Digital controls let you program cook times for consistency across staff.
    • Installation: Gas fryers need a licensed installer, proper ventilation, and a commercial hood. Check your gas line size before you order.

    Frequently Asked Questions

What size commercial gas fryer do I need for my restaurant?

It depends on your menu and volume. Small gas fryers and countertop units work for low volume or as a backup. If frying is a main part of your menu, go with a floor model or industrial gas fryer. Plan for 1 to 1.5 pounds of oil capacity for every pound of food you fry per hour. If frying is central to your kitchen, size up to avoid bottlenecks.

What is the difference between a countertop and floor gas fryer?

Countertop fryers are compact, hold less oil, and fit in tight spaces or low-volume kitchens. Floor fryers are larger, hold more oil, and are built for nonstop, high-volume frying. If your fryer runs all service, choose a floor model for better output and faster recovery.

How many pounds of oil does a commercial gas fryer hold?

Countertop fryers hold 15 to 30 pounds of oil. Standard floor models hold 40 to 50 pounds. High-capacity floor fryers can hold 80 pounds or more. More oil keeps temperatures stable during heavy use and cuts recovery time.
