The Omcan StagionelloEvo® STG150TTW is a professional curing cabinet in a distinctive Red finish, equipped with ClimaTouch® controls and Fumotic® aromatization for fermenting, drying, seasoning, and preserving meats. With a 330 lb capacity, 4 guide sets, and 20 stainless steel hanging rods, this unit can produce up to 330.7 lb of salami in an average of 20 days.

ClimaTouch® Digital Controls with 100-Recipe Memory

The ClimaTouch® digital control system provides precise management of temperature, humidity, and air circulation parameters. Internal memory stores approximately 100 recipes in 352 Kb RAM, with 30 preset recipes included for common curing programs. The intuitive touchscreen interface enables operators to monitor and adjust all curing parameters in real time for consistent batch-to-batch results.

Fumotic® Aromatization with Integrated Climate Management

The Fumotic® system delivers controlled smoke and aromatization directly within the curing chamber, eliminating the need for separate smoking equipment. Working temperature range of 23°F to 122°F and storage temperature range of 14°F to 158°F accommodate all stages from initial fermentation through final aging. Ambient relative humidity must remain below 90% RH for optimal operation.

AISI 304 Stainless Steel Construction with Hanging Rod Interior

All internal and external parts that come in contact with food are made from AISI 304 stainless steel. The interior is configured with 4 guide sets and 20 stainless steel hanging rods for suspending salami, sausages, and other cured meat products. The 220V/3.42kW/14A electrical system with NEMA 6-20P plug powers the complete climate control system within a 35.6" x 30.9" x 83.26" footprint.
