Dry-Age Control 3.0 with pH Monitoring and HACCP

The 4.3" color touch screen puts all controls at your fingertips, with 4 integrated dry-age climatic recipes for beef, pork, sheep/goat, and wild meat, plus 1 custom recipe slot you can program with your own time, temperature, humidity, and ventilation parameters. The dual HACCP register logs temperature, humidity, and pH by event, date, and time, giving you full traceability for health inspections and internal quality audits. pH reading and monitoring tracks the meat's acidity in real time, catching any anomalies before they affect your product.

Umiright Humidity Management and Dynaflow Air System

Stagionello's patented Umiright system actively manages moisture levels inside the cabinet, maintaining humidity between 30% and 99% RH. This regulated drop-weight management keeps your yield higher and your waste lower compared to passive humidity systems that allow uncontrolled moisture loss. The Dynaflow air circulation system manages thermodynamics and air speed to guarantee optimal aeration, so every shelf position in the cabinet receives consistent airflow. The result is even drying across all four shelves, each rated at 77 lb capacity, without hot spots or uneven aging.

Stainless Steel Construction with Plug-and-Dry Setup

The entire interior structure is built from AISI 304 stainless steel, the same grade used in surgical instruments. Unlike painted or coated interiors that can chip and harbor bacteria, stainless steel stands up to the acidic environment of aging meat and cleans completely during the self-sterilization cycle. The exterior is also AISI 304 stainless steel or painted sheet metal depending on the model. Tank or direct water connection options for the humidification system mean you can operate in locations without a dedicated water line.
