The Omcan 48166 Manual Sausage Stuffer
This Trento 48166 is a manual sausage stuffer with a 10 L stainless steel cylinder, built for residential and commercial sausage making, from the butcher counter and deli backroom to the home charcuterie bench. Twenty-two pounds of seasoned meat loads in one fill. The cylinder lies horizontally with the crank on the end, keeping the whole machine under 10 inches tall. It is a hand-crank machine with no motor and no cord, so it works anywhere there is bench space; plan on about 37 inches of bench front to back, on a smooth, dry, strong surface about 31 inches off the floor.
10 L Stainless Steel Cylinder
The cylinder is the part that lives in contact with raw seasoned meat, and here it is stainless steel. The piston seal is a tight fit inside it, so when only a part load is left at the end of a run, the mixture goes in at the mouth of the cylinder and the rack pushes it forward until the air exits through the filler instead of into the casing. At the end of work the rack pulls out, the ring nut unscrews, and the funnel and cylinder come off, so every part that touched meat can be washed and thoroughly dried.
Two-Speed Gear Drive Crank
The crank turns one of two pins on the gear housing. The slow forward pin drives the toothed rack and its piston pad through the cylinder while you stuff; the fast backward pin winds the rack back out for a refill. The fast gear is for retracting the piston, not for forcing the last of the meat through, which can damage the piston.
Four Stuffing Funnels from 15 to 38 mm
Four plastic funnels come with the machine at 15, 23, 28 and 38 mm. A funnel mounts at the outlet end of the cylinder under a threaded aluminum ring nut: unscrew the nut, set the funnel you want, and tighten the nut to lock it. The machine is partially taken apart for packing, so fitting the first funnel and winding the rack out are the setup steps before the first fill.
Stainless Steel Cylinder and Sides Throughout
Both the cylinder and the body sides are stainless steel, and the ring nut that holds the funnel is aluminum. The machine sits on rubber feet, with a footprint of 37 x 15.7 inches and a weight of 42.8 pounds. The same 10 L horizontal gear drive stuffer is also offered with red enameled steel sides as item 48162.
