A built-in sneeze guard protects the food surface, and a repositionable tray slide on either side of the unit lets guests set down their plates while they serve themselves.

The ventilated cooling system circulates cold air evenly across all 12 pan positions, holding temperatures between 31 and 33 degrees Fahrenheit. That is cold enough to keep sliced tomatoes, shredded cheese, and leafy greens safely below the danger zone without freezing. Two included GN pan covers help retain temperature on items you want to protect between service periods. The 430 stainless steel exterior and 201 stainless steel interior stand up to the constant moisture and acidic foods that salad bars deal with daily.
