The paddle induction motor turns at 80 RPM, which is deliberately slower than what you see in most consumer machines. That slower speed incorporates less air into the mix, which is exactly what you want for dense, creamy Italian-style gelato. Higher-speed machines whip in too much air and produce a lighter, fluffier texture that tastes more like soft serve than gelato.
